Nettie's Burrito Casserole

WARNING: Nettie is not a chef however all things that she is brave enough to post here are super yummy and more than likely easy. If you like things to be "just so" do not try to follow this recipe, as she does not measure she just dumps junk together.

Here we go, Nettie style.

9x13 pan
Pam
Tortillas
Beans (fat free refried or black are my favorite)
Meat (I typically use about 1.5 ground beef or chicken breast)
LOTS of shredded cheese
Salsa
Corn (optional)
Rotel (optional)
sour cream (yum)
lettuce
black olives (optional)


Preheat your oven to 350
brown your hamburger or cook your chicken (Deryk likes lots o' meat)
spray your pan with pam
pour a little salsa in the bottom and spread it all around
cover the bottom of your pan with a single layer of tortillas
dump in your beans
dump in your meat
add some corn and rotel if you want
sprinkle on a layer of cheese
layer of tortillas
coat tortillas with a thin layer of salsa to prevent them from drying out
add cheese to make it pretty and tasty (add some black olives if you feel frisky)
cover with foil
bake for about 20-30 minutes until the cheese looks all melty and just right
let sit for about 5 minutes
dish out
top with sour cream, lettuce, black olives, and salsa

and KABAM! Yummo on a plate!
